Aim for medium-fine — slightly finer than coarse sand, closer to granulated sugar.

BREW STEPS — 3 POURS

Bloom — 0:00 | Pour 50 g in a slow spiral, fully saturating all grounds. Let rest until 0:30.

Main pour — 0:30 | Pour straight down to 175 g total, keeping a steady, centered stream.

Final pour — ~1:30–1:45 | As the bed begins to show, pour in a slow spiral to 300 g total.

Drawdown | Allow the coffee to drain fully. Target finish: ~2:30.
WHAT YOU SHOULD TASTE
Pear, demerara sugar, and a bright, cheeky acidity. Expect clarity in the cup, richer sugars, and a clean finish with a little less body than a heavier brewer.
