The ridged walls create air pockets that keep flow even throughout the brew, and the three filter wedges lift the paper just enough to improve drawdown without you having to think about it. The result is a clean, expressive cup that’s remarkably repeatable.

Aim for medium-fine — slightly finer than coarse sand, closer to granulated sugar.

BREW STEPS — 3 POURS

  1. Bloom — 0:00 | Pour 50 g in a slow spiral, fully saturating all grounds. Let rest until 0:30.

  2. Main pour — 0:30 | Pour straight down to 175 g total, keeping a steady, centered stream.

  3. Final pour — ~1:30–1:45 | As the bed begins to show, pour in a slow spiral to 300 g total.

  4. Drawdown | Allow the coffee to drain fully. Target finish: ~2:30.


WHAT YOU SHOULD TASTE

Pear, demerara sugar, and a bright, cheeky acidity. Expect clarity in the cup, richer sugars, and a clean finish with a little less body than a heavier brewer.

If the cup tastes thin → go 1:14. Heavy or dull → go 1:16. Just a touch light → try 1:14.5.
